CHARDONNEY
by Family Crest, Monterey County
- Meticulous Harvest & Aging: Grapes are picked at peak ripeness during the cool night, cold-settled for 48 hours, then fermented in small French Oak barrels with weekly lees stirring to build richness.
- Ideal Monterey Climate: The cool, maritime climate with fog and breezes creates perfectly balanced, flavorful wines.
- Rich Flavor Profile: Aromas of golden apple and lemon peel with hints of sweet vanilla and spice, offering a creamy mouthfeel, balanced acidity, and a lingering finish.
CABERNET SAUVIGNON

- Prime Terroir & Elevation: Grapes are harvested from high-elevation, volcanic soils in Red Hill, benefiting from 10% more UV light than neighboring valleys, enhancing fruit flavors.
- Stainless Steel & Oak Aging: After a 14-day fermentation in stainless steel, the wine is aged in 50% new French Oak barrels, adding depth and complexity.
- Rich & Layered Flavor: Aromas of dried cranberry, cherry, and mocha spice, with flavors of dark fruits, baking spice, and sweet oak, leading to a long, lingering finish.
PINOT NOIR

- Hand-Sorted & Gently Destemmed: Grapes are carefully hand-sorted and gently destemmed, fermented for 7-14 days with three punch downs per day, and aged in 40% new French Oak barrels.
- Perfect Monterey Climate: The cool, maritime climate with fog and breezes allows for the development of balanced, flavorful grapes.
- Vibrant Flavor Profile: Featuring red jewel tones, aromas of red raspberry, cherry, and cola with flavors of sweet red fruit, cinnamon spice, and a hint of vanilla for a rich, lingering finish.
